Sparkling white wine refermented in the bottle, with a thin and continuous perlage. It is done as it once was, following the techniques inherited from family activity. The lack of disgorgement is its strong point, its beauty and its goodness.

Vinification

The vinification takes place in steel at a controlled temperature. In January, the liqueur de tirage necessary for frothing is added to the base wine. The wines are then bottled and capped with a crown cap.

Refinement

At the end of fermentation, a process that lasts about fifty days, and at the end of the subsequent frothing, the wines remain sur-lie in the bottle.

The uniqueness of the Chakra Rosso lies in the innovative vinification technique "vendanges entières", used in the domaines of the Côte d'Or in Burgundy. The carefully selected bunches are used whole in open vats.

Giovanni Aiello's rosé moves vigorously in the glass. A particular wine, which is born in a shallow, clayey and calcareous soil, where the roots of the plants creep into the karstic fissures.

The Chakra Verde comes from the vineyards located in the magnificent area known as "Canale di Pirro", on the slopes of Valle d'Itria, a wide karst depression in the heart of the Murgia dei Trulli, a few kilometers from the Adriatic Sea.
